Banana Chocolate Chip Cookies. Soft and chewy, actually a hug for your tastebuds.
🔅No added sugar
🍪1 ripe banana
🍪1/4 cup monkfruit sweetener
🍪1/3 cup coconut oil
🍪1 teaspoon vanilla extract
🍪1 flax egg (1 Tbs flax meal + 2 Tbs water)
🍪1 cup gluten free flour blend (with xanthan gum)
🍪1/4 cup hemp hearts
🍪3/4 tsp baking powder
🍪1/4 tsp baking soda
🍪1/4 tsp kosher salt
🍪1/3 cup unsweetened vegan choc chips
🍪dash coarse sea salt to taste (such as maldon)
Preheat oven to 350, line a baking sheet w parchment paper, set aside.
Combine all dry ingredients (except sugar and sea salt) in a medium bowl and set aside.
Using a stand mixer (or handheld) “cream” together coconut oil, sugar and vanilla. Add flax egg. Next, add in dry ingredients slowly until it is all combined. Last, add in the chocolate chips. The final result will be a very light dough.
Using a small cookie dough scoop drop onto lined cookie sheet. Sprinkle each cookie with a couple of sea salt flakes. Bake for 15 minutes until edges are golden. Enjoy!
